Lucas Chandler is formally the Chef de Cuisine at Il Posto Restaurant in Denver, CO. Starting as a dishwasher at age 15, he has steadily progressed in his craft ever since. While completing a bachelor’s degree in Culinary Nutrition at Johnson & Wales University, he completed an internship at the nationally recognized Vista Verde Guest Ranch in Steamboat Springs, CO. This gave him the culinary spark to advance his career and focus on fine dining. Lucas got his start in the Denver restaurant scene working for Mirepoix in Cherry Creek, which at the time was under the same ownership as Adega and Table 6. While he began as a line cook, Lucas progressed to every station, and was able to gain experience in all areas of the kitchen. In between restaurant jobs while finishing school, he completed an internship with Carmichael Training Systems in Colorado Springs, working closely with Lance Armstrong’s coach and dieticians, developing specialized diets for athletes. After graduating summa cum laude, he went on to become the personal chef/dietician for Carmelo Anthony of the Denver Nuggets during his Olympic gold medal-winning season in 2008. Having joined Il Posto in May of 2007, Lucas has had the freedom to create hundreds of dishes for the ever-evolving menu, and has developed an immense respect for seasonal, creative, and sustainable food.

Outside of the kitchen, Lucas likes to spend his free time racing his mountain bike in ultra endurance and 24 hour races, trail running and hanging out with his dog Velo.
