Iceland is known for having some of the freshest, most delicious ingredients and foods in the world. While travel restrictions prevent us from visiting the Nordic nation itself, that doesn’t mean we can’t experience a taste of Icelandic cuisine right from home! We’ve rounded up some of the most delicious recipes, snacks and beverages to try from the comfort of your kitchen to keep you full until your next visit.
For meat lovers, Iceland Lamb has a variety of delicious recipes to explore. If you’re looking for a tasty way to spice up your lunches, try Icelandic Lamb’s delicious Lamb Roast Sandwich with Green Pea-Dill Pesto Recipe:
Ingredients:
The Sandwich
200 gr lamb steak
Salt and pepper
Sourdough loaf or other bread
Mixed salad leaves
1 tbsp olive oil
2 sprigs fresh thyme
3 cloves garlic
Brush the steaks with oil and season with salt and pepper. Roughly chop and fry on a pan at medium heat for approx 2 minutes each side, adding the thyme and garlic to the pan and bashing the steaks with the oil. Transfer onto a plate and cover for 5 minutes before serving. Slice the bread and toast lightly, add the green pea pesto, salad, sliced lamb and pickled cucumbers and red onions.
Green pea and dill “pesto”
200 g frozen shelled peas, defrosted
1 cloves garlic, crushed
6 tbsp fresh dill
80 ml vegetable stock
2 tbsp fresh lemon juice
Salt and pepper
Place all ingredients in a food processor and blend until quite smooth. Add some more stock if the mixture seems too thick. Season and set aside until ready to use.
Quick pickled cucumbers and red onions
90 ml white wine vinegar
30 g sugar
60 ml water
½ cucumber deseeded and sliced
½ red onion, sliced thinly
Mix vinegar, sugar and water in a pan and bring to a boil. Pour over the vegetables in separate bowls and leave to pickle for at least 20 minutes.

Iceland is home to some of the freshest seafood in the world. Craving something savory? Try this delicious Wild Icelandic Salted Cod with Prosciutto and Roasted Baby Potatoes:
Ingredients:
1½ lb wild, Icelandic salted cod, watered
8 slices prosciutto (Parma ham)
½ lb baby potatoes
Chunky tomato sauce
1 onion, chopped
2-3 garlic cloves, chopped
1 cup chicken stock
2 (14 oz) cans of diced tomatoes
1 tbsp tomato purée
1 tsp oregano
½ tsp thyme
10 leaves fresh basil
Black pepper to taste
Directions:
Step 1
Boil potatoes. When boiled, set aside, let cool and quarter.
Step 2
Preheat oven to 200°F.Working with four pieces (6 oz each) of cod, wrap each in the ham (two slices per portion, end to end). Fry fillets and potatoes in oil on a non-stick pan until brown on both sides. Season with black pepper.
Step 3
Transfer fillets and potatoes to a roasting dish and put in the oven for about 25-35 minutes, or until cooked.
Step 4
Finely chop the onion and garlic. Let sweat in a pot. Add the chicken stock, tomatoes, tomato purée,oregano, thyme and basil. Season with salt and pepper. Let simmer on a medium heat until thick. Serve either chunky or mix with a hand blender until smooth. For elevated flavor, try adding a splash of white wine while boiling.
Step 5
Serve fillets with roasted baby potatoes and chunky tomato sauce.

No meal is complete without a tasty dessert! Next time you’re in the mood for something sweet, try these Krímí Chocolate Coconut Skyrsicle from Icelandic Provisions – North America’s favorite skyr!
Ingredients:
1 Chocolate Coconut Krímí Skyr Container (4.4oz)
2 1/2 tbsp Sugar (Powdered or Granulated)
1 ounces Dark Chocolate
Coconut Oil – Several Drops
Shredded Coconut
(For Sprinkling)
Directions:
STEP 1
Whisk together krímí and sugar. Divide into two popsicle molds and freeze for a minimum of 3 hours.n
STEP 2
Melt the chocolate over water bath or in the microwave along with the coconut oil. Sprinkle over already frozen popsicles, sprinkle with shredded coconut right away while chocolate is still soft. Wait a few minutes while the chocolate hardens or pop the popsicles back into the freezer until ready to serve.

Ingredients:
1 ½ part Reyka Vodka
¾ part Amontillado sherry
2 parts fresh clementine juice
½ part lemon juice
½ part orgeat

Directions:
Hot: Add all to a pan and heat gently until warmed through. Serve in a mug and garnish with rosemary
Cold (pictured) : Shake hard and strain into a chilled martini glass. Garnish with a star anise.

Ingredients:
Brennivín 1.5oz

Directions:
Shake and double strain into a martini glass. Garnish with Arctic Thyme springs, or regular Thyme if unavailable.
