The Crystalline Collins is a James Beard-inspired cocktail incorporating Iceland’s signature aquavit, Brennivín, otherwise known as “fire wine” due to its licorice-like taste that comes from caraway seeds. In this recipe, Brennivín’s unique spicy taste is paired with vanilla liqueur to evoke a flavor that is simultaneously warm, sweet, light, and tangy.
- 1.5 oz Brennivín aquavit
- 0.25 oz Giffard Vanille de Madagascar (vanilla liqueur)
- 1 oz fresh lemon juice
- 0.5 oz J.M. Sirop de Canne (cane syrup)
Begin by combining the J.M. Sirop de Canne, Giffard Vanille de Madagascar, Brennivín, and fresh lemon juice into a cocktail shaker. Shake well, strain, and serve over ice in a Collins highball glass. Top it all off with soda water and a lemon twist to make the final product even more refreshing!
