Matt Foley was born and raised in Boston, Massachusetts. He attended Johnson and Wales in Providence, RI, graduating with degrees in culinary arts and food service management. Matt then moved on to work with famed Chef John Elkhay for seven years, three of which as Executive Chef of Citron in Providence. At the age of 23, Matt passed his level two sommelier certification.
After seven years in Providence, Matt moved to Boston to begin a two-year stint at Radius. From there, he worked at Craigie on Main for four years, then helped open Sycamore in Newton, MA. Together with owner Shane Smyth, the idea for The Merchant was born. Being involved since the pre-opening stages allowed Matt to get involved in planning from the bottom up and really stamp his vision for a new restaurant. He enjoys grape soda and ice cream, and he hopes to be the first person to moonwalk a marathon.
