Braised Leg of Lamb with Vegetables

Whether you’re cooking for one or for the whole family, high-quality, nutritious food makes people feel good. This recipe featuring Icelandic lamb is an all-season favorite for a hearty and nutrient-packed meal rooted in Icelandic tradition. Braised Lamb
Method

Sear on a hot griddle pan. Add salt and pepper. Place in the oven, cook at 110°C for 45 minutes or until core temperature reaches 62°C. The juices from the lamb are placed in a pot, reduced until it reaches a syrupy texture. The reduction is mixed with the herb oil below.

Side dish (for 6 people)

Method

Rinse vegetables whole and chop them on site. Sautè vegetables in oil and place them and the whole herbs with the leg of lamb for the last few minutes of cooking. Add sea salt and pepper according to taste.

Mix all ingredients in a food processor. 

Arrangement

Place vegetables in a large dish, cut the lamb and place on top of the vegetables with the cut facing up and slices lined over the cut. Drizzle herb  oil and broth spread on top. 

Crispy Icelandic Cod with Teriyaki and Sesame

Icelandic fish is well-known for its health benefits, including high protein content and low fat and sodium percentages. This Icelandic cod recipe from Icelandic Seafood provides those great nutrient benefits combined with a sweet and savory flavor that will quickly become a crowd favorite. 

Ingredients

Directions

Step 1:
Mix the teriyaki sauce, sweet chili sauce, finely grated lime zest and juice in a large bowl. Add the cod fillet and coat evenly.

Step 2:
Melt the coconut oil in anon-stick frying pan over a medium heat. Reserving the marinade, drain the fish and fry skin side down for 4–5 minutes, until slightly crisp and blackened.

Step 3:
Turn the fish over and cook for another 2–3 minutes, or until cooked through. Set aside.

Step 4:
In another pan, cook the stir-fry vegetables with a splash of oil for a few minutes. Add the soy sauce and reserved marinade and cook for 2–3 minutes or until the vegetables are cooked.

Step 5:
Pile the stir-fry vegetables onto a plate and top with the crispy cod. Sprinkle with sesame seeds and serve.

Directions

Place 1 8-oz. block of cream cheese on a platter. Lay thinly sliced smoked salmon on top of the cream cheese. Finely chop 1 sweet onion and pour over the salmon. On top of the onions place 2-3 T. of rinsed capers. Serve with party pumpernickel slices.
