At LondonHouse Chicago, Adam Peabody serves as the hotel’s head of mixology, overseeing all activity behind the bar, from operations to menu building, at both LH Rooftop’s tri-level restaurant and rooftop venue and the hotel’s lobby lounge Bridges. In his role, Adam most enjoys ideating imaginative cocktail menus – at times using unusual ingredients – treating each drink as an opportunity to express himself creatively. Prior to joining the food and beverage team at LondonHouse Chicago when the hotel and rooftop opened in 2016, Adam honed his mixology and management skills at various spots around Chicago working his way from bartending at dive bars to leading the beverage program at fine dining establishments. In 2017, Adam was a finalist in Ketel One’s Master of the Mule Competition, receiving praise for his Matcha Mule. While he grew up in the suburbs of Chicago, Adam now lives in the West Loop neighborhood. Immersing himself in the beverage industry even when not behind the bar at LondonHouse, Adam runs a beverage consulting company and cold brew coffee business.
